For Lunch today I "ventured" out and created some homemade Hummus. It was delicious! Hummus is a Middle Eastern puree. For those of you who think you do not like Hummus, this ingredient combination may change your mind! I thought it was so tasty served in between Whole Wheat Pita Pockets. I combined a can of garbanzo beans, olive oil, some lemon juice, minced garlic, cumin, salt and a very small dash of cayenne pepper together in the blender and blended it all smooth. Basically I just added all the ingredients to taste. One word of caution-go easy on the lemon juice! A little goes a long ways.
By the way-Hannah absolutely loved this lunch! We had it with Some seasoned couscous and garden fresh greenbeans. Delightful! I loved preparing this meal because it was so simple and fast. Great for demanding little tummies. :)
