It's been Good

Today's been a good day thus far. The kids and I both had a successful trip to the grocery store-with the help of Jesus we got through the whole list without a cry, a scream, a push or a shove. Praise God for that!
Afterwards, came home, cleaned the house and washed dishes, gave the kids some yummy fruit Kabobs to munch on and then we had lunch. Afterwards I got the laundry started and then made granola with the help of the kids. This granola recipe is delicious!!

10 c. oats-I used half old fashioned and half quick
2 c. wheat germ
2 c. shredded coconut
1 c. brown sugar
1 c. chopped nuts-I used walnuts, but I bet pecans are delish
1 c. dried fruit (I used raisins and cherries)
1 c. light olive oil or coconut oil
1 c. maple syrup and/or honey (I used a combination)
2 t. vanilla
1 t. salt
1 t. cinnamon

Mix together all the ingredients except for dried fruit. Pour the mixture into shallow pans, spreading evenly. Toast at 275* for 30-45 minutes. Stir occasionally. Turn oven off, stire in dried fruit and let sit in oven for 30 minutes.
Delicious!!

I got together one of my many menu's last night and bought the ingredients from the store this morning so that I can follow it and thus help to gain some semblance of order in my life.
You guys, I just want to be home. I'm trying to keep my chin up and make the best of it all, but there's no place like home. There just isn't. Plain and simple.
I've been reading some great works of authorship and have been gaining so many inspirational thoughts. The only trouble is: it almost makes me depressed. Hmph.

Christmas is almost here! My shopping is done, most of the cards are in the mail. I've gotten most of my sewing done-still need to do one more project before Christmas. But if I don't get it done, it's ok. It will be waiting for me.
I made homemade fudge this week-gotta do that every year ya know! :)
Overall, I've just been keeping super busy keeping up with the youngin's and the hubby...
