Menu Plan Monday


So What's on the menu for this week? :) The never ending question. It's so hard to come up with good solutions to every day meal dilemma's. Especially when money is tight and you try not to go to the store too often, it's hard to come up with something to eat out of an already limited pantry. But here's my go at it. I'll try and do some baking this week as I'm really wanting some yummy baked goods! Just finding the spare time to do it in is hard! I didn't come up with lunch plans for this week-we'll just have leftovers and/or see what we can scrounge up. I planned two meals and we'll work in the third!
Breakfasts:
Muesli
Muffins and fruit
Crockpot Wheat Berries
Cold Cereal/Granola
Omelets
Breakfast Danish (hopefully!)
Dinners:
Beans+Bigfranks (crockpot) and Mac n Cheese
Oatburgers and Oven Fries
Potato Casserole and Salad
Rice and Veggies
Gluten Stakes and Baked Potato
Special K Loaf, Carrots and Salad
Extras:
Homemade Hummus
Grapes
Melon
Cucumbers
Cherry Tomatoes
Cookies
There! It actually doesn't look all that bad, does it? :) Lots of 'tatos worked in, and rice and I suppose I shall soak some beans for one meal in here somewhere...
I am looking forward to making some muffins with my homemade buttermilk!
Did you know how easy it is to make buttermilk?? It's just 1/4 c. of storebought buttermilk in the bottom of a quart sized jar, fill the remaining space with whole milk, give it a good shake and let it sit on the countertop for 12-24 hours. That's IT! And it tastes delicious! After you get your buttermilk going, you use your own buttermilk as the starter instead of storebought. So there's your tidbit of the day. Yummalicious in pancakes, w.w. bread, muffins, etc! :)
