Homemade Gluten Steaks (aka Fried Chicken the Vegetarian Way)
1 1/2 c. Vital Wheat Gluten
1 1/2 c. water
1 1/2 T. Flour
Put flour in mixing bowl. I used my Kitchen Aid with the dough hook attachment. Add water, develop the gluten with sufficient kneading and then let sit for 1/2 hr. Take gluten out of bowl and slice and shape into cutlets (or as I did, in strips) Drop slices of gluten into boiling broth and simmer for one hour.
Dip gluten slices in a mixture of flour, italian bread crumbs,Lawry's seasoning salt and nutritional yeast flakes.
Fry in a small amount of oil.
Broth for Boiling:
5 c. water
3 T. McKay's Chicken Style Seasoning
1/2 c. onion, finely chopped
1 T. celery salt ( I did NOT use that much!)
1 T. Vegex or Savorex (basically a vegetable bouillon cube)
Ok. So The only thing I would change about this recipe is the salt content. I ended up having to rinse the already cooked gluten in cool water afterwards to rid it of some of the salt. I also added a bit more than 5 c. of water to the broth. Other than that.... fabulous recipe and OH so Tasty!!
