A Few Recipes to Share

Since you all have asked, and since several of these recipes are definitely worth a share, here they are! :)

BBQ Lentils (this recipe IMO was so-so, I added and revamped it a bit and made it a bit tastier.)
5 c. water ( I added water at the end, so it ended up being more like 7 c.)
1/2 t. salt ( i added a bit more, esp. after i added more water.)
1 bay leaf
1 1/2 c. lentils
1/8 t. garlic salt
1/2 c. brown rice
1 c. chopped onion
4 grated carrots
1/4 t. thyme
1/4 c. honey (didnt have any, used brown sugar)
1 T. molasses
1/2 t. ginger
1/8 t. cloves
1/4 c. apple cider vinegar
Simmer 1st 6 ingred. for 25 minutes (at least!!) then add onions and carrots. Simmer a while longer then add the last ingred. Simmer til well cooked. I also added in a "splash" of BBQ sauce to give it a little extra "zing" at the end.

Quick "beef" and Noodles (loved!)
1 bag Veggie Burger Crumbles
1/2 c. chopped onion
8 oz. egg noodles
4 c. tomato juice
1 c. water
1/2 c. sour cream (actually didn't use this and loved the recipe, though i am sure it is amazing with it!)
1 t. salt
1/8 t. pepper (opt)

in a kettle, brown "beef" and onion. Add the rest of the ingredients except for the sour cream and cover. Simmer for 15-20 minutes until the noodles are tender. Add sour cream and stir to combine. Like I said, I didn't use the sour cream and we all devoured this tasty and easy dish! :)

Pumpkin Pie White Hot Chocolate
3 c. Milk of your choice. I used soymilk, i also like using Almond milk for it
1 c. canned pumpkin puree
1/2 t. cinnamon
1/4 t. ginger
1/8 t. cloves
1/8 t. nutmeg
1 t. vanilla
4 oz. roughly chopped white chocolate
Basically, you heat all the ingredients except for the chocolate til they are nice and hot and then add the chocolate and slowly stir it into the hot pumpkiny milk until it melts into it. serve in a mug with a dollop of whipped cream and cinnamon sprinkled on top. :)
