Pizza Pizza- Yummmm-o!

Me and my silly kiddies made Pizza tonight for supper. We made THIS pizza crust recipe
Drizzled it with Olive Oil, sprinkled it with garlic powder and Italian Seasoning and minced garlic, Spread it with Sauce and then began to top it.
We put chopped fresh spinach on it, and sliced Mushrooms, minced Onions, diced red, yellow and orange bell peppers, olive halves and I meant to put fresh basil on....
Then we topped it with a delicious Vegan Melty Cheese Sauce (recipe at the bottom of this post.)
Put it in the oven at 375* and......
Incredibly delicious, vegan veggie pizza. Heart healthy. And definitely Tummy Yummy. :)

And that slice right there? It's headed for MY mouth.

Recipe for Melty Cheese:

2 c. water

1/4 c. raw cashews, well washed

3 T. diced pimientos (or, I personally often will just use a fresh Roma tomato or 2. It's just for color)

1 1/2 t. Salt

1/2 t. onion powder

1/4 t. garlic powder

3 T. cornstarch

Blend until smooth, and then cook over a low heat, stirring frequently until thickened.

This sauce is delicious in Enchiladas (will post recipe when I make them next!) Also wonderful in Macaroni and Cheese.... which I made yesterday and I will post that picture momentarily. ;) Or, try Nachos!

  1. This looks like a great recipe. I have been eating a vegetarian diet for a while now and have slowly been replacing dairy product in my diet as well because I've been having stomach problems when I eat it. My hardest thing to give up will be the cheese. So I will most definitely be giving this a try.
