Don't you just want some???
If you have an abundance of tomatoes in your garden to harvest (or in your fridge from a recent harvest) you just might need something to do with them. You know, other than the typical stand by tomato sandwhich. (although come to think of it, I haven't had all that many tomato sandwhiches this summer myself! What's the matter with me?! *goes off to make a sandwhich*)

So you want to know how to make this masterpiece? It's easy as can be and tastefully delicious.
Take those tomatoes, wash 'em up and slice them into cubes. Pop them into an olive oil drizzled baking dish and pile those tomatoes into the pan. Chop some fresh basil and sprinkle that in, drizzle on some more olive oil, a splash of Balsamic Vinegar, a generous sprinkle of salt and that's pretty well it my friends. Crank up that oven to 400*F and let those babies cook! After about 20-30 minutes, take the dish out of the oven and generously sprinkle the top with freshly grated parmesan cheese. Of course, that's only if you want to. As you can see from the above photo, half the pan has cheese, the other half doesn't.
Now, you can just scoop it up with a spoon and eat it just like that, or you can serve it next to some steaming hot garlic bread... oh yeah. ;)
