{Nutritional Matters} Vegan Frito Pie

Vegan Frito Pie~ a big hit for the kids and the Hubs! 

I got the idea for this recipe from Sweet Treats and More 
Since our family is mainly Vegan Vegetarian-due to health choices, as well as dairy allergies- I took a look at this recipe and knew that it could easily be adapted to meet our needs.  The results were Delicious!
Here is my adapted version of the recipe:
1 bag Boca Burger Crumbles
1/2 c. Finely Diced Onions
1- 16 oz. can Chili Beans (I used the Mild Bush Beans version)
1- 8 oz. can Tomato Sauce ( I used Hunt's)
1-15 oz. Can of Fire Roasted Diced Tomatoes
1 Envelope of Taco Seasoning ( I didn't have that so used chili powder, cumin and a dash of red pepper and a sprinkle of onion and garlic powder.)
1 c. Veggie Shreds Cheese. I used 1/2 and 1/2 of Mozzerella and Cheddar Style
1 sm. bag of Frito's
 1 1/4 c. of Better Than Sour Cream
 
~Brown the Burger crumbles and diced onions in a skillet with a bit of olive oil. Add beans, tomato sauce, diced tomatoes, taco seasoning, and a 1/4 c. of cheese.
Sprinkle fritos on the bottom of a greased 9x12 pan. Pour the Chili mixture on top and smear the Sour cream over the top. Sprinkle with remaining cheese and top with the remaining Fritos.
Then Bake for 20 minutes at 350*~
And dig in!
