Snow Day Potato Soup

 It's been a cold and snowy Winter for many.  Some days you just need a good pot of potato soup to warm up your bones and sooth your soul.
For fear of Winter being over before I finally get this posted, I decided I had better get a move on it! So without further adieu- except for some great shots of winter at its best..... I present to you.... SNOW DAY POTATO SOUP! ;)




Oh. There's that potato soup you were looking for. Coming in out of that cold snowy air, there's nothing quite like this bowl of Vegan Potato soup to cheer you up! 
I find it so hard to tell people what is in my dishes when I create them because honestly, I don't typically measure much of anything. I sift and pour and sprinkle and dash and call it good.
I'm sorry friendlies... it's just kind of how I roll. So, I'll do my best to remember what I put in the soup and a rough amount of how much! So please keep this in mind when you are adding in the amounts- they are all guestimates on my part because I'm a dump and pour sorta cook. ;)
Snow Day Vegan Potato Soup
1 bag of frozen diced hash brown potatoes
1 diced onion
4 cloves of garlic minced
1/4 c. Vegan Butter
1 1/2 cartons of Vegetable Broth
2 cups Water
1 c. rinsed cashews
 3/4 tsp. Salt
1 tsp. Onion Powder
1/2 tsp. Garlic Powder
 scant Tablespoon Parsley
 1 Tbs. McKay's Chicken Style Seasoning
1/2 c. Instant Potato Flakes
 
Saute' Chopped onions and garlic in butter. When they are nice and tender add the frozen potato cubes and some of the broth. Once the potatoes are bubbling, then add the rest of the broth.
I blend the cashews with the water, and add the onion powder, garlic powder, McKay's chicken seasoning and salt and blend that as well. After the potatoes are tender I slowly add in the creamy cashew mixture and turn the heat down to a simmer. When everything is cooked nice and tender I add some instant potato flakes-just a small amount. It helps to thicken as well as add a nice consistency to the soup. Sprinkle in the Parsley last of all and give the soup a stir to incorporate.
Dish up the soup into bowl and top with Baco Bits, a sprinkle of parsley and a bit of cheese of your choice.
And there it is. Delicious and creamy soup for you to enjoy. And I hope that the measurements turn out well enough for you! Don't hesitate to fool around with them a bit- it will be ok! ;)
Enjoy this soup with a nice hunk of that overnight crusty bread that I like to make.... mmmmm Warm those tummy's up!
